I perconaly preffer an early war at the start of the middle ages, just as you can hover beween u having 4 attack and 4 defense (med inf and pikmen) and them having 3 off and 2 def (spearmen and swordsman). In other words, where i good attack plan can allow you to win via his weak spots (speamen). This allowes me to stablize a strong nation, which would be twice as big, or if im on a small continent, then take it. Then another war at the start of modern, or i might have one at the end of industrial and one at middle modern, i usually end up winning thru space or domination, sometimes culture, against 3-4 openents (out of 6-7, not only thanks to me).

War in the middle ages for sure! I usually have the templars, and coupled with knights - or other civ specific mounted units - I run roughshod over the other civs who are stuck in ancient times. I can usually double the size of my empire thru conquest at this point. Having armies is a great boost, especially armies of mounted units. Modern times, not that much fun, just tedious as a tank army unit backed up with infantry just rolls over everything. Alot of hurry up and wait as you try to move your units to the far flung corners and mop up resistance. I found the helicopters/paratroopers to be next to useless, and the bomber units are only good for picking off enemy units outside of their cities. I tried nukes once - never again - and cruise missles aren't worth the cost when bombers are available. Naval combat, in all ages, is pretty much a joke. About the only thing I build, and only if AI's are building lots of boats are submarines. You can sentry them right next to the coastal cities and ignore them till war breaks out, and then, goodbye enemy shipping. Privateers, eh.... sometimes helpful, most of the time useless. Good for setting up a picket line tho.

Level: king. There is still a very peaceful era in the beginning if you want to, and I like the building of the civilization almost as much as having it tested by a war. My top 4 of eras: 1 - Modern (just because of the more elaborate air and sea capabilities) 2 - 19th century, like infantry, rifleman, artillery, cavalry. In such a time I take good care that I have enough artillery, just in case another civilization is earlier with developing tanks. 3 - Ancient, there the weaponry is more equally matched for every civilization. 4 - Musketeers, knights, pikemen. I like to use concentrated attacks with archers or longbows though, if I have to. Or skirmishing with mounted units which is very mobile. This era is so short that I often live through it peacefully.
