When conquering your rivals, what do you generally do with their cities? Do you keep em or burn em? What makes you decide?

Some of each

Prepare some settlers in advance with more on the way.
Destroy large bolshie cities and rebuild asap to heal units close to the battle front.

Occupy city if it has a wonder. Occupy cities if the civ is just about to be eradicated.

Destroy or occupy the rest based on your assessment of whether you can complete the invasion or not. On how many settlers you have or will have shortly. Or how many units you can spare for garrisons etc. Or how hard it would be to keep them happy in the event of a peace

Destroying saves units for war, and you can rebuild at leisure, but other peaceful civs will move in with settlers very quickly if they can.

Keep them, starve down the population to about 4 or 5, then allow to grow again. Eventually my citizens will outnumber the conquered ones, and they will start assimilating.

I don't worry as much if I'm about to wipe out a civ, as then the citizens are always happy (once their civ is wiped out).

I usually occupy the city, turn all pop into taxmen and wear them down to 1 or two pop. Then I populate with settlers or disband and settle nearby to maximize land use. IIRC you get rep hits from razing but dont from disbanding. As I played up the skill level tree I found myself disbanding sooner to avoid overthrows.

For me it depends on the level of game im playing. At moment got 2 on the go, 1 on Warlord I keep the cities as im no1, top dog civ.

The other on Monarchy I destroy the cities and use the resultant workers to build more roads, railroads etc and I carry a few settlers to takeover the old cities position.

It depends on the city and what forces I have available, but generally I destroy them. I try to have a pool of settlers available to replace the destroyed cities quickly, then I use worker units to give it 3-4 population. I usually have a bunch of captured workers but I only use them for this if the civ I captured them from is extinct.

However if the city has a Wonder that is still active I'll try to keep it. Also sometimes I don't have enough settlers so I will keep cities that have a resource I need or are strategically located in bottle necks or places where they will be helpful in continuing my advance.

In those cases I reduce their population before taking the city by bombardment if possible. After taking the city I reduce the food production to starvation levels and do whatever is necessary to get the unhappy population under control. If I have the money I'll start building a settler for a couple of turns then hurry it along. I'll then disband it in the city to add shields to the next settler to reduce it's cost and repeat as log as necessary/possible.

I nearly always keep them. For some reason, perhaps my style of play, I have very little problem with cultural flips. I generally play as the Babylonians, and love to build temples and libraries, so my culture is always way up there; in fact I usually turn off the cultural win since that would otherwise always happen.

Generally in a game on a huge map I'll have maybe 1 culture flip either way the entire game. In the latter stages of a game when my treasury is usually fairly large, I just build temples in the conquered cities right away. This seems to reduce the chance for culture flip. It also expands the territory I control, and leads to domination victories. For this reason, I usually also turn off that victory condition.

I always keep them. Razing makes the rest of the world way too upset. And starving them does to a lesser degree. Sometimes I may put in a settler to get some of my own people in the city.

-If I am on the attack I usually capture the cities but if the attack goes sour I try to destroy as many cities as possible and run any cities that the enemy might get his hands on to the ground. I DO destroy territory cities(The damn cities other civs place to get that last bit of territory or push back my territory). Whenever another civ places a city in that one tile that I have not yet covered I attack at once, paying no respect to who's the most powerful and steamroll his/her entire empire if I get the chance. I hate that.....
