I have seen many references to check on AI's gold; but how do I accomplish this?

If you go to the foreign advisor screen and click on a few different tabs you should be able to see it. I think the Tech one shows how much they have to the nearest 10 or so and the resources tab how much they have in surplus each turn.

Although you can't trade gold until you have researched currency, not sure if it shows up before then or not.

Or talk to the other civs (trade) and you should be able to see it.

This may not work until you can trade currency with the other civs, but you can usually see how much gold them have merely by talking with them.
