Every increase in population size will cause 1 unhappy face. The trick is to have more happiness producing 'things' than the current number of unhappy citizens. Likewise with health units and population increasing unhealthiness. Some things that increase happiness includes having a state religion, temples and coliseums (in each city), some resources, spending extra money on culture (top left corner of your screen), etc. If you're doing well on health units, but not on happiness, trade your cows or sheep with a neighbor for something like gold that gives you happiness (indicated by a smiley face). Also, some things like the coliseum and theater make your people much happier with the culture slider turned up a little. Also, a couple civics might help (F3 menu). Representation adds 3 smiley faces to your top 5 largest cities, if I remember right. Hereditary Rule will add a smiley face per military unit in the city. That might be the single easiest way for you to add happiness sometimes. Hope that helps.
